This is the chicken marinade I come back to when I want something simple, juicy, flavourful, and useful.

The Easy Greek Chicken Marinade You’ll Use Again and Again

Garlic, oregano, thyme, parsley, paprika, lemon, and good olive oil do all the heavy lifting. Give the chicken some time to marinate, then grill, roast, or cook it in a skillet.

That’s it. The result is deeply savoury, lemony, herby chicken with beautifully caramelized edges.

And the best part? You don’t need a particular cut of chicken. You can use thighs, drumsticks, breasts, bone-in, boneless—use what you’ve got. This is everyday cooking at its best: a good marinade, a little planning, and dinner practically takes care of itself.

The Secret Is the Marinade

There isn’t much to this marinade, which is exactly why it works.

Lemon brings acidity and brightness.
Garlic provides savoury depth.
Oregano and thyme bring the classic Greek herbal character.
Parsley keeps things fresh.
Paprika adds colour and gentle sweetness.
Yellow mustard lends tang and a hint of bitterness from turmeric.
Olive oil carries all those flavours into the chicken and helps create beautifully browned edges during cooking.

It’s a simple formula that you can remember without reaching for a recipe card.

How Long Should You Marinate Chicken?

For this marinade, 2–8 hours is the sweet spot. Thirty minutes will give you noticeable flavour if you’re short on time. Overnight works beautifully for most chicken cuts.

I wouldn’t leave smaller boneless pieces sitting in the lemon marinade for multiple days. The acidity can eventually affect the texture of the meat.

Why I Love It

It’s incredibly useful to have a couple of dependable chicken marinades in your back pocket. This is along my summer favourites. It reminds me of summer sailing on the Mediterranean, with all the right flavour notes.

The combination of lemon, garlic, oregano, thyme, parsley, and olive oil is unmistakably Greek, while paprika adds a little warmth and colour and the yellow mustard gives tang and rich undertones.

It’s bright enough for summer grilling but substantial enough to carry you through the rest of the year. Marinate it in the morning and dinner is almost done before you’ve started.

Easy Mediterranean cooking. Marinated Greek Chicken uses garlic, lemon, oregano, thyme, parsley, paprika, and olive oil for juicy, flavourful chicken. Grill, roast, or pan-fry any cut.


Ingredients

Units Scale
  • 1 1/2-2 lb chicken, any cut
  • 4 large garlic cloves, minced
  • 1 tablespoon fresh oregano
  • 1 teaspoon sweet paprika
  • 2 teaspoons fresh thyme leaves
  • 2 tablespoons finely chopped flat-leaf parsley, leaves & stems
  • 1/3 cup extra virgin olive oil
  • 1 lemon, zested and juiced
  • 1 tablespoon yellow mustard
  • 1 1/2 teaspoons kosher salt
  • 1/2 teaspoon freshly ground black pepper

Instructions

Make the Marinade

  • Add the garlic, oregano, paprika, thyme, parsley, olive oil, lemon zest, lemon juice, yellow mustard, salt, and pepper to a bowl.
  • Whisk well to combine.
  • Add the chicken and turn to coat thoroughly.
  • Cover and refrigerate for at least 30 minutes, or ideally 2–8 hours.

Cook the Chicken

  • Remove the chicken from the refrigerator approximately 20 minutes before cooking.
  • Remove excess marinade from the surface, allowing any excess to drip back into the bowl.
  • Cook using your preferred method until the chicken reaches an internal temperature of 165°F in the thickest part.

Grill

  • Preheat the grill to medium-high.
  • Grill the chicken, turning as needed, until deeply browned and cooked through.
  • Allow to rest for 5–10 minutes before serving.

Roast

  • Preheat oven to 425°F.
  • Arrange chicken on a parchment-lined baking sheet or roasting pan.
  • Roast until cooked through and nicely browned.
  • Larger bone-in pieces will require more time than boneless pieces.

Skillet

  • Heat a large skillet over medium-high heat with a little olive oil.
  • Add the chicken and cook until well browned on both sides and cooked through.
  • Work in batches if necessary so the chicken browns rather than steams.
