The breadcrumbs are the secret weapon here: they soak up all that butter and spice, then cling to the vegetables, creating little nuggets of savoury texture that remind me of crumbled sausage.
Except there isn’t any meat.

A Little Taste of Something Different for Your Autumn Table
Garam masala is one of my favourite ways to bring warmth to autumn cooking without automatically reaching for chili.
This is loosely based off a Polish dish, where bread crumbs and wax beans are the star of the show. Here we give a familiar vegetable — yellow beans — a completely different personality. Add sweet corn (or substitute chickpeas for protein), intensely flavoured sun-dried tomatoes for just the right acidity against the spices to give us a balanced curry flavour.
Add those buttery, spiced crumbs, a finish of cilantro and toasted sesame seeds and you’ve got a side dish that’s warm and rich for fall.
Sometimes all a vegetable dish needs is a little imagination.
Why the Breadcrumbs Matter
This isn’t a case of sprinkling breadcrumbs over the top. The crumbs are part of the dish.
They absorb the butter and spices, turning into little savoury, crunchy bits that distribute the garam masala throughout every bite. Mixed through the beans and corn, they give the dish a texture that’s surprisingly reminiscent of crumbled sausage.
It’s a useful trick whenever you’re trying to make a vegetable dish feel more substantial: give your crumbs some serious flavour.

Description
Yellow Beans & Garam Masala with sweet corn, sun-dried tomatoes and buttery spiced breadcrumbs. A warm, curry flavoured vegetarian side dish for your autumn table.
Ingredients
- 2 cups yellow wax beans, trimmed and blanched
- 1 cup fresh corn kernels (about 2 cobs)
- 1/4 cup sun-dried tomatoes, finely chopped
- 3 tablespoons butter, cubed
- 1/2 cup coarse fresh breadcrumbs
- 1 small red onion, diced
- 3 - 4 cloves of garlic, minced
- 1 teaspoon ground turmeric
- 2 teaspoons garam masala
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- Handful of cilantro to finish
- 1 tablespoon of toasted sesame seeds
Instructions
Blanch the Beans
- Bring a large pot of salted water to a boil.
- Add the trimmed yellow beans and blanch for 2–3 minutes, until bright and just tender.
- Drain and immediately cool under cold running water to stop the cooking.
- Drain well and set aside.
Build the Spiced Crumbs
- Melt about half your butter in a large skillet over medium heat.
- Add the breadcrumbs and toast them thoroughly in butter.
- Add the diced onion and cook for 2–3 minutes until softened.
- Add garlic, and more butter. Cook about 1 minute until soft.
- Add the turmeric and garam masala and stir into the buttery breadcrumbs
- Cook for about 30 seconds, just until the spices become fragrant.
- Continue cooking, stirring frequently, until the crumbs are golden and toasted.
Add the Vegetables
- Add the blanched yellow beans, fresh corn and sun-dried tomatoes to the skillet.
- Add another cube of butter, toss everything together until the vegetables are coated with the spiced crumbs.
- Season with salt and freshly ground black pepper.
- Cook for 2–3 minutes, just until everything is hot and the corn is tender-crisp.
- Finish with fresh cilantro and toasted sesame seeds. Serve immediately.
Notes
Make it vegan with plant-based butter or olive oil and dairy-free breadcrumbs.
