Hi, I’m Cori Horton. Recipe Developer. Food Creator. Chef.
Peace Love & Butter is my 2025 re-creation of the culinary journey that has been “Food Gypsy” since 2010. Exploring recipes, ingredients and technique from the global kitchen. Now creating out of my home kitchen on Northern Vancouver Island, Canada – Peace Love & Butter re-brands this tale of love – and butter.
Originally from Vancouver, I’ve lived in Canada from coast to coast. After a decade in radio and the glass-walled corporate marketing offices, a lay-off changed my life. That lead to a move across the country and five years as the solo operator of the Dragonfly Inn in rural Nova Scotia.
But that was just the beginning of where food would take me. In 2010 I sold the big red house that was the Dragonfly Inn and set out on a 30,000 mile journey that lead me to Le Cordon Bleu, Ottawa, where I learned to cook – with butter. That foundation served me well over the last fourteen years in catering and high-end food retail in Ottawa. Until life there ended, and I returned ‘home’ to Pacific shores.
Now we travel the world in the kitchen. One recipe at a time.

Some of my recipes has been featured in BBC History Magazine, Food Network Canada, and the National Post. I’ve appeared on local television morning shows, CTV Ottawa Morning Live, and Rogers Daytime. In 2013 I was invited to compete in the World Burger Championships, part of the World Food Championships, November 2013 in Las Vegas, where I placed fifth overall in the burger category and was featured in the associated television series on FYI TV, which currently plays on Amazon Prime, Season 1, Episode 1.

Descended Of Romani
Bear with us as we shuffle brand. It will take some time to re-brand and update all the photos on the more than 300 recipes. The word “Gypsy” in my brand was carefully chosen; as an homage to my Romani heritage.
But times and language changes, and we must change with it. My Romani Great Grandmother, Rosalie, immigrated to Canada from Austria in 1928. She was nineteen years old.
She considered “Gypsy” the English word for her people. It was my way of embracing a forbidden part of my heritage. We still celebrate Rosalie, and share her recipes.
There’s nothing but respect for Travellers, Roma & Romani here.
