Description
Crispy Everything Smashed Potatoes loaded with cheddar, bacon, and everything bagel seasoning served with a tangy French dill pickle dip loaded with pickles, cornichons and capers.

- 2 pounds baby potatoes (yellow or red)
- 3 tablespoons olive oil - divided
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 3/4 cup shredded sharp cheddar cheese
- 4-6 slices bacon, cooked and crumbled
- 2 tablespoons Everything bagel seasoning (plus extra)
- 2 tablespoons green onion or chives, chopped
Instructions
- Cook the Potatoes. Place the baby potatoes in a pot of salted water and bring to a boil.
Cook until fork-tender, about 15–18 minutes. Drain well and allow to steam dry for a few minutes. - Smash. Preheat oven to 425°F / 220°C. Toss potatoes with a tablespoon of olive oil and move onto a parchment-lined baking sheet. Using the bottom of a glass or cup, gently smash each potato until flattened to about 1/2 inch thick, but still intact.
- Add the “Everything”. Combine everything seasoning with remaining olive oil and brush potatoes liberally. Sprinkle potatoes with cheddar cheese and crumbled bacon. Roast in the oven for 20 – 30 minutes, until the cheese is melted and the potatoes are deeply golden.
- Finish with chopped green onion, chives and fresh dill if desired.

Make ahead: highly recommend making your French Dill Pickle Dip ahead of time, because it gets better by the minute!
