A simple vegetable side ready in 20 minutes, or less. This is one of those fast, easy vegetable sides that earns its place in the regular rotation. Fresh zucchini and sweet shallots are quickly sautéed with rough-chopped garlic, olive oil and a handful of fresh seasonal herbs.
Here I’m using my own Herbes du jardin blend: thyme, chives, parsley and rosemary, all picked fresh from the garden.
Everything Sounds Better in French
Herbes du jardin – sounds more elegant than “I went outside and grabbed whatever was growing.” Which is completely accurate. Use what you have.
Nothing complicated. Just good vegetables, good olive oil and fresh herbs. Dinner doesn’t need to be difficult.

Why I Love It
Fast. Fresh. Done. A quick zucchini side dish that works with almost anything. The zucchini stays tender without becoming mushy, the shallots bring sweetness, and the garlic and fresh herbs give the whole thing plenty of flavour.
It’s also wonderfully flexible. Use whatever fresh herbs you have growing — or whatever needs picking before it takes over the garden. Or whatever is fresh and needs to pass in the bottom drawer of the fridge.

Quick Zucchini & Shallots

Easy Quick Zucchini & Shallots sautéed with garlic, olive oil and fresh garden herbs. A simple vegetable side dish ready in 20 minutes or less.
Ingredients
- 4 medium zucchini, cut into bite-sized pieces
- 3 shallots, thinly sliced
- 2 garlic cloves, roughly chopped
- 3 tablespoons extra-virgin olive oil
- 2 tablespoons fresh thyme leaves
- 2 tablespoons fresh chives, chopped
- 2 tablespoons fresh flat-leaf parsley, chopped
- 1 tablespoons fresh rosemary, finely chopped
- 1/2 teaspoon kosher salt
- 1/4 tsp freshly ground black pepper
Instructions
- Heat the olive oil in a large skillet over medium-high heat.
- Add the zucchini and cook for about 5 minutes, tossing occasionally, until tender and lightly browned.
- Add the shallots and garlic and cook for 2–3 minutes until beginning to soften.
- Add the fresh thyme, chives, parsley and rosemary.
- Season with salt and black pepper.
- Toss everything together and cook for another minute, just until the herbs are fragrant.
- Serve immediately.
