Description

Easy Quick Zucchini & Shallots sautéed with garlic, olive oil and fresh garden herbs. A simple vegetable side dish ready in 20 minutes or less.


Ingredients

Scale
  • 4 medium zucchini, cut into bite-sized pieces
  • 3 shallots, thinly sliced
  • 2 garlic cloves, roughly chopped
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons fresh thyme leaves
  • 2 tablespoons fresh chives, chopped
  • 2 tablespoons fresh flat-leaf parsley, chopped
  • 1 tablespoons fresh rosemary, finely chopped
  • 1/2 teaspoon kosher salt
  • 1/4 tsp freshly ground black pepper

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the zucchini and cook for about 5 minutes, tossing occasionally, until tender and lightly browned.
  3. Add the shallots and garlic and cook for 2–3 minutes until beginning to soften.
  4. Add the fresh thyme, chives, parsley and rosemary.
  5. Season with salt and black pepper.
  6. Toss everything together and cook for another minute, just until the herbs are fragrant.
  7. Serve immediately.
