Description
Our easy Rustic Peach Cake has a moist almond crumb, topped with fresh peaches and crunchy coarse sugar, served with homemade Chantilly cream. A beautiful summer cake anyone can make.
Ingredients
Peach Cake
- 1/2 cup unsalted butter, softened
- 1/3 cup granulated sugar
- 1/3 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon ground green cardamom
- 1 1/2 cups all-purpose flour
- 1/3 cup almond flour
- 5 teaspoons baking powder
- 1 teaspoon salt
- 2/3 cup heavy cream
- 2 cups ripe peaches, thinly sliced
Crunchy Sugar Crust
- 1/4-1/3 cup coarse raw sugar
Chantilly Cream
- 1 cup heavy whipping cream
- 1 teaspoon vanilla extract
- 1/4 cup powdered sugar
Instructions
- Prepare the Pan
- Preheat oven to 350°F.
- Grease a 9-inch springform pan and line the bottom with parchment.
- Lightly grease the parchment.
Prepare the Batter
- In a large bowl, beat the softened butter and sugar until light and fluffy.
- Beat in the eggs, one at a time. Add the vanilla and cardamom.
- In a separate bowl, whisk together the all-purpose flour, almond flour, baking powder, and salt.
- Add the dry ingredients to the butter mixture in two additions, alternating with the heavy cream.
- Mix just until combined.
Build the Cake
- Spread the batter evenly into the prepared springform pan.
- Arrange the sliced peaches over the surface, slightly overlapping where necessary.
- Cover the entire top with a generous layer of coarse raw sugar.
- This is not the time to be stingy.
Bake
- Bake for approximately 65 – 90 minutes, or until the centre is set and a skewer inserted into the cake comes out clean or with a few moist crumbs attached.
- If the top is browning too quickly, loosely tent with foil during the final portion of baking.
- Cool in the pan for approximately 20 minutes.
- Carefully release the springform and allow the cake to cool further before slicing.
Make the Chantilly Cream
- Beat the cold whipping cream with powdered sugar and vanilla until soft peaks form.
- Don’t overwhip.
- Serve generous spoonfuls alongside the cake.
Notes
Serving Suggestions. This cake is wonderful slightly warm, at room temperature, or chilled.
Always with Chantilly cream, in my current mood. But I could be swayed by:
• Vanilla ice cream
• Crème fraîche
• Greek yogurt
• Mascarpone
• Fresh raspberries
• Fresh blueberries
• Toasted almonds
• A drizzle of honey
For entertaining, bake it earlier in the day and serve at room temperature with a big bowl of Chantilly cream on the side. Let everyone help themselves.
