You know what I love about the internet? The way we share food culture. Chances are, if you’ve eaten it on holiday there’s someone online, making that very dish. I consume a great deal of food content. Sometimes it reminds me of something delicious I had on vacation, which is how we got here!

It was like having a Spanish bar in my own kitchen. No tiny stools, no tiled walls, no bartender required — just a bag of crispy potato chips, a handful of shrimp, some garlic and olive oil, and about five minutes, and a bottle of good Spanish wine.

Very Simply Spanish

This is my very simple take on the Spanish bar snack gambas al ajillo — those gloriously garlicky shrimp cooked quickly in hot olive oil. Here, instead of serving them with bread for soaking up all that delicious oil, we’re pouring the whole sizzling lot over a bed of potato chips.

And honestly? I think the chips might be the better vehicle.

The trick is in the technique. The shrimp are halved lengthwise and dried really well, then laid in a single layer in a heatproof pan. Meanwhile, the olive oil is heated with shallot, garlic, green onion and roasted red pepper until everything is bubbling hot. Pour that hot aromatic oil directly over the shrimp and they cook almost instantly.

Finish with fresh parsley and lemon, grab a cold drink, and congratulations: your kitchen is now a Spanish bar.

How to Make Spanish Garlic Shrimp & Potato Chips

The Trick Is the Hot Oil

The beauty of this technique is that the oil becomes both the cooking medium and the sauce.

Rather than cooking the shrimp in a skillet and transferring them afterward, you pour the bubbling aromatic oil directly over the raw shrimp. Because they’re thinly sliced lengthwise and arranged in a single layer, the residual heat cooks them in seconds.

Dry shrimp + very hot oil + a single layer = ridiculously fast cooking.

And whatever you do, don’t leave that garlic oil behind. It’s the best part of the dish — especially once it hits those crispy chips.

What to Serve With Garlic Shrimp Chips

This is made for casual, easy entertaining. Put the platter in the middle of the table and let everyone dig in.

Serve alongside other Spanish-inspired snacks like olives, Marcona almonds, roasted peppers, manchego cheese, jamón or crusty bread. A simple green salad would turn it into a light meal.

And naturally, you’ll want something cold to drink. My vote: a big jug of Sangria. This is bar food. We’re not overthinking it.

Sometimes dinner doesn’t need a recipe. Sometimes it just needs a really good idea.

Why I Love It

This is one of those recipes that barely qualifies as cooking — but the technique makes it feel like something special.

The hot oil does double duty: it cooks the shrimp while infusing the oil with garlic, shallot and pepper. Because the shrimp are halved and spread in a single layer, they cook incredibly quickly without needing a frying pan full of ingredients.

And then there are the chips. They stay crisp enough to give you that satisfying crunch while soaking up just enough of the garlicky olive oil. Think tapas meets loaded nachos, but with a decidedly Spanish accent.

Description

Ingredients

  • 8-12 tiger shrimp, peeled and deveined
  • 1/3 cup extra-virgin olive oil
  • 2 shallots, thinly sliced
  • 3-4 garlic cloves, thinly sliced
  • 1 green onion, thinly sliced
  • 1/4 cup roasted red pepper, finely chopped
  • 1/4 cup fresh flat-leaf parsley, chopped
  • 1/2 lemon, cut into wedges
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 4-5 cups crispy potato chips

Instructions

Prepare the Shrimp

  1. Peel and devein the shrimp, then slice each shrimp in half lengthwise.
  2. Pat the shrimp very dry with paper towel. This is important — you want the hot oil to sear and cook the shrimp, not steam them.
  3. Arrange the shrimp in a single layer in a shallow heatproof serving dish or pan.
  4. Season lightly with salt and freshly ground black pepper.

Make the Garlic Oil

  1. Add the olive oil, sliced shallots, garlic, green onion and roasted red pepper to a small skillet.
  2. Heat over medium heat until the oil is very hot and the aromatics are bubbling.
  3. Once the garlic is fragrant and the oil is actively bubbling, remove it from the heat immediately.

Cook the Shrimp

  1. Carefully pour the piping-hot garlic oil and aromatics directly over the shrimp.
  2. The shrimp will begin cooking immediately.
  3. Give them about 30–60 seconds, turning once if necessary, until just cooked through.
  4. Do not overcook them — they are small, halved shrimp and cook incredibly quickly.

Build Your Spanish Bar Snack

  1. Arrange the potato chips on a large platter.
  2. Pour the hot garlic shrimp and every last drop of the infused olive oil over the chips.
  3. Scatter generously with fresh parsley.
  4. Finish with fresh lemon juice and serve immediately.

Notes

A Few Easy Variations

  • Make it spicy: Add a pinch of dried chili flakes or thinly sliced fresh chili to the garlic oil.
  • Use prawns: Any small-to-medium shrimp or prawns work beautifully.
  • Add smoked paprika: A small pinch gives the oil another layer of Spanish flavour.
  • Go bigger: Serve the shrimp and garlic oil over toasted baguette instead of chips for a more traditional gambas al ajillo presentation.
  • Party size: Double the shrimp and oil, but cook in batches so the shrimp remain in a single layer.
