Easy Nam Jim Sauce in 10 Minutes
Originally served as a Thai dipping sauce for seafood, traditional Nam Jim is made with toasted rice flour, fresh chilies, garlic, fish sauce, lime juice, sugar, and herbs. The exact ingredients vary by region, family, and the dish being served, but the essential balance remains the same: heat, salt, acidity, sweetness, and fresh aromatics working together in one vibrant sauce.
Seeing as I was using it immediately, and wanted a loose, chunky sauce, I skipped the toasted rice flour in this version. Excellent way to thicken and extend your sauce, if you choose to use it.
It may have been created for seafood, but Nam Jim is far too delicious to save for shrimp and fish.

Nam Jim Thai Seafood Sauce Is Amazing on Everything
Spoon it over grilled chicken. Drizzle it onto rice bowls. Serve it with roasted vegetables, grilled pork, crispy tofu, or fresh summer salads. Add it to noodles, use it as a dipping sauce for spring rolls, or keep a small bowl on the table whenever a dish needs a little more life.
This version uses fresh Thai chilies, cilantro roots and tender stems, fish sauce, lime juice, and sugar. The cilantro roots and stems are especially important. They carry an earthy, concentrated cilantro flavour that gives the sauce depth without weighing it down.

The Thai Sauce You Need for Summer Grilling

Why I Love It
I love sauces that deliver big flavour without requiring complicated cooking. Nam Jim comes together in minutes, but its balance of lime, fish sauce, chili, sugar, and fresh herbs makes almost anything taste more exciting.
It’s also endlessly adjustable. Make it fiery or mild. Add more lime for brightness, more sugar to soften the heat, or more fish sauce for deeper savoury flavour. Once you understand the balance, you can make it exactly the way you like it.

Nam Jim Thai Dipping Sauce

Description
Super easy Nam Jim Thai dipping sauce. Bright, spicy, sweet, salty, and packed with fresh lime and cilantro, it’s traditionally served with seafood, but it’s fantastic with grilled chicken, pork, vegetables, rice bowls, and salads.
Ingredients
- 3 to 5 Thai chilies, finely chopped
- 1 clove garlic (optional)
- 2 tablespoons finely chopped cilantro roots and/ or tender stems
- 3 tablespoons fresh lime juice
- 2 tablespoons fish sauce
- 1 tablespoon granulated sugar
- 1 tablespoon water
Instructions
- Combine chopped Thai chilies, garlic and cilantro roots (if available) and stems, in a food processor or mortar and pastel. Pulse until chopped and combined, or smash until bright and juicy. Then transfer to a small bowl and add lime juice, fish sauce, sugar, and water. Stir or whisk until the sugar dissolves. Taste and adjust the balance of lime, fish sauce, sugar, or chili to suit your preference. Refrigerate until ready to serve.
- Taste and adjust as needed: Add more lime juice for brightness. Add more sugar to soften the heat and acidity. Add more fish sauce for a deeper savoury flavour. Add additional chili for more heat.
- Cover and refrigerate for at least 15 minutes before serving. Store in an airtight container in the refrigerator for up to 5 days. Stir before serving.
