Mayonnaise is one of the most versatile flavour bases in the kitchen. Creamy, rich, and neutral enough to take on almost any direction, it can become a bright herb sauce, a smoky sandwich spread, a tangy salad dressing—or, in this case, a sweet-and-spicy mango condiment with just enough heat to keep every bite interesting.
Fresh Mango Brings Big Flavour to a Creamy Sauce
Fresh mango brings natural sweetness and tropical flavour, while Thai sweet chili sauce adds gentle warmth, tang, and a little garlic. Fresh lime juice keeps everything bright and prevents the mayo from becoming too rich. The result is creamy, fruity, savoury, and surprisingly versatile.
A Versatile Condiment for Chicken, Seafood, Sandwiches and Salads
It’s the sauce that brings my Thai Chicken Mango Pasta Salad together, coating the curly pasta, grilled red curry chicken, crisp vegetables, and fresh herbs in one bright, flavourful layer. But don’t stop there.
Spread it on burgers, spoon it over grilled chicken, serve it with shrimp, drizzle it over fish tacos, or use it as a dip for sweet potato fries. It’s one of those sauces that can turn a simple meal into something memorable in just a few minutes.
From the 50 Flavours of Mayonnaise Collection
Our Mango Chili Mayo is part of the Sweet Heat category in the 50 Flavours of Mayonnaise collection. That original resource was built from years of professional kitchen recipe testing and a simple approach: a great sauce can completely change a meal… or a sandwich.
The idea was simple: start with a dependable mayonnaise base, then build bold, useful sauces for sandwiches, salads, burgers, seafood, grilled meats, and everyday cooking.
The collection explores flavour combinations across several categories, including:
• Fresh herbs
• Citrus
• Smoky and spicy
• Sweet heat
• Global flavours
• Classic steakhouse combinations
• Creamy salad dressings
• Sandwich spreads and burger sauces
As I update the collection, I’ll be adding new images, videos, and standalone recipes that explore these flavour combinations in more detail. Because sometimes a great sauce deserves more than a single line in a list.
Why I Love It
I love flavour combinations that balance more than one note. Mango brings sweetness, chili adds warmth, lime contributes acidity, and mayonnaise gives the sauce its creamy body. Together, they create a condiment that feels playful and tropical without being overly sweet or aggressively spicy.
It’s endlessly adaptable! Add more chili sauce for heat, more lime for brightness, or a little fresh ginger for an extra layer of flavour. Once you understand the balance, you can make it entirely your own.
