This is my answer to ‘chips and dip’ but with a bit more substance and a lot more personality. Perfect for game night, sleep-overs, and marathon movie nights. Crispy potatoes, cool, creamy dip.

The magic of smashed potatoes, to my mind, is their texture! First we boil small potatoes until tender, toss with olive oil, give them a firm press so they crack and spread, then roast until the edges turn deeply golden and crisp. All those little nooks and crannies become perfect landing spots for melted cheese, bacon, and seasoning.

But the real secret weapon here – is the dip.

My French Dill Pickle Dip leans bright, tangy, and herbaceous rather than heavy. It’s chunky and thick, but still creamy enough to cling. Sour cream and creamed cheese form the base, we load in our dill pickles then we double down with chopped cornichons, capers, and fresh dill that makes it that little bit different.

Salty, briny, and fresh all at once, it cuts beautifully through the richness of the potatoes.

Description

Crispy Everything Smashed Potatoes loaded with cheddar, bacon, and everything bagel seasoning served with a tangy French dill pickle dip loaded with pickles, cornichons and capers.


Ingredients

  • 2 pounds baby potatoes (yellow or red)
  • 3 tablespoons olive oil - divided
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3/4 cup shredded sharp cheddar cheese
  • 4-6 slices bacon, cooked and crumbled
  • 2 tablespoons Everything bagel seasoning (plus extra)
  • 2 tablespoons green onion or chives, chopped

Instructions

  1. Cook the Potatoes. Place the baby potatoes in a pot of salted water and bring to a boil.
    Cook until fork-tender, about 15–18 minutes. Drain well and allow to steam dry for a few minutes.
  2. Smash. Preheat oven to 425°F / 220°C. Toss potatoes with a tablespoon of olive oil and move onto a parchment-lined baking sheet. Using the bottom of a glass or cup, gently smash each potato until flattened to about 1/2 inch thick, but still intact.
  3. Add the “Everything”. Combine everything seasoning with remaining olive oil and brush potatoes liberally. Sprinkle potatoes with cheddar cheese and crumbled bacon. Roast in the oven for 20 – 30 minutes, until the cheese is melted and the potatoes are deeply golden.
  4. Finish with chopped green onion, chives and fresh dill if desired.

Notes

Make ahead: highly recommend making your French Dill Pickle Dip ahead of time, because it gets better by the minute!
