These Strawberry Banana Sheet Pan Pancakes are fluffy, fruity, and perfect for feeding a crowd. An easy baked pancake recipe loaded with fresh strawberries and bananas and the perfect basic recipe to be any pancake you desire.

- 2 cups all-purpose flour
- 1/4 cup brown sugar
- 2 tablespoon granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 2 large eggs
- 1 1/2 cups buttermilk
- 1 teaspoon vanilla extract
- 1/4 cup melted butter, or oil
- 2 ripe bananas, sliced
- 1 1/2 cups fresh strawberries, sliced or halved
- Maple syrup and/or icing sugar for serving
Instructions
- Preheat oven to 425°F (220°C). Lightly grease a 13 x 18-inch baking sheet (or 8 x 13-inch) baking pan.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda and salt.
- Make a well in the dry ingredients, add eggs, milk, vanilla, and melted butter (or oil).
- Mix everything together with a spatula, starting in the center to break the eggs, then incorporate your dry ingredients, folding them in from the sides. Stir until just combined. Do not overmix.
- Spread batter evenly into prepared pan.
- Scatter sliced bananas and diced strawberries evenly over the batter.
- Bake for 18 – 20 minutes, or until golden and a toothpick inserted in the centre comes out clean.
- Allow to cool for 5 minutes. Slice into squares and serve with maple syrup.
