Description

These Strawberry Banana Sheet Pan Pancakes are fluffy, fruity, and perfect for feeding a crowd. An easy baked pancake recipe loaded with fresh strawberries and bananas and the perfect basic recipe to be any pancake you desire.


Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup brown sugar
  • 2 tablespoon granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 1/2 cups buttermilk
  • 1 teaspoon vanilla extract
  • 1/4 cup melted butter, or oil
  • 2 ripe bananas, sliced
  • 1 1/2 cups fresh strawberries, sliced or halved
  • Maple syrup and/or icing sugar for serving

Instructions

  1. Preheat oven to 425°F (220°C). Lightly grease a 13 x 18-inch baking sheet (or 8 x 13-inch) baking pan.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda and salt.
  3. Make a well in the dry ingredients, add eggs, milk, vanilla, and melted butter (or oil).
  4. Mix everything together with a spatula, starting in the center to break the eggs, then incorporate your dry ingredients, folding them in from the sides. Stir until just combined. Do not overmix.
  5. Spread batter evenly into prepared pan.
  6. Scatter sliced bananas and diced strawberries evenly over the batter.
  7. Bake for 18 – 20 minutes, or until golden and a toothpick inserted in the centre comes out clean.
  8. Allow to cool for 5 minutes. Slice into squares and serve with maple syrup.
