Pancakes are always a crowd pleaser, but standing at the stove flipping batch after batch? Not so much. Strawberry Banana Sheet Pan Pancakes, to the rescue!
Baked in a professional half-pan this recipe delivers all the fluffy, golden goodness of traditional pancakes without the fuss. If we can make Sheet Cakes for those golden layers of dacquoise cake, then Sheet Pan Pancakes have to be an easy way to deliver a consistent, even cake texture, but with the firm exterior finish, like a pancake.
Loved that this was an enormous time saver.
One Pan, No Flipping, No Fuss
Sheet pan pancakes make tremendous sense when feeding a crowd. Everyone gets to eat at the same time, there’s no juggling warm plates, and cleanup is refreshingly fast. Better yet, leftovers reheat beautifully, making them perfect for meal prep. A quick warm-up in the toaster oven and breakfast is ready in minutes.
A Fresh Berry Breakfast Everyone Will Love
Sweet ripe bananas add natural flavour and moisture, while fresh strawberries become little pockets of jammy sweetness as they bake. The small, heritage strawberries are in season, so I just sliced them in half. The result was tasty and fresh. Indulgent enough for a weekend brunch but easy enough for busy mornings.
The combination of strawberries and bananas is a classic. The bright berry flavour balances the creamy sweetness of banana. Simple ingredients, one pan, and plenty of flavour—exactly the kind of recipe that can easily earn a spot on permanent rotation for family breakfast.

Sheet Pan Pancakes, Creative Touches
If you want to play with shapes,, you could cut sheet pan of pancakes any shape you like. Fun shapes for the kids? So easy. In fact, let them cut them out, with cookie-cutters. A pizza cutter was fast and efficient to quickly cut squares or slabs. They stack well, perfect with a drizzle of maple syrup, a dollop of yogurt, or a handful of extra fresh berries. They’re equally at home on a leisurely Sunday morning or tucked into lunchboxes as a wholesome snack.
We had leftovers and a friend used the slabs like sandwich bread and made a peanut butter and strawberry jam sandwich, then grilled it like a grilled cheese. I now think she is an evil genius. (And, she’s bad for my waist line.)
Why I Love It
I love this recipe, for the COOK! Cooking pancakes this way takes all the stress out of making pancakes for a crowd. (And all that standing over a hot stove!) One pan, one bake, and everyone eats together. Plus, this batter is an open canvas, it truly can be any pancake you like.
