Never been a big mocktail gal, imagine my surprise when I started craving them. Everything I want on a hot afternoon—icy, juicy, and bursting with ripe flavour, but without the booze. (Twenty-year-old me would surely mock sixty-year-old me!) Sunny Bellini Peach Raspberry Iced Tea with its ribbons of red, juicy raspberry melting into every glass under a thick, icy peach slush. Pure fruit flavoured heaven.

A Fruity Mocktail Inspired by the Classic Bellini

Inspired by the classic Bellini cocktail, revised as refreshing family friendly mocktail that captures all the elegance and fruit-forward flavour of the original, without the alcohol.

The secret is layering. A smooth blend of frozen peaches and peach juice creates a naturally sweet slushy base that’s rich in fresh fruit flavour. Cold-brewed peach tea adds a light, refreshing finish, while raspberry ice cubes slowly melt into the drink, creating beautiful swirls of colour and a gentle burst of berry sweetness.

Why Cold-Brew Tea?

Cold brewing is one of my favourite ways to make iced tea because it produces a cleaner, smoother flavour than brewing with hot water. As tea steeps in cold water over several hours, it reduces the amount of tannins, polyphenols (caffeine in black and green teas) and some aromatic compounds extracted from the leaves.

Delicate fruit flavours—like peach in this recipe—stay bright and fresh instead of becoming muddled or overpowered. It takes a little more time, but the reward is an exceptionally crisp, refreshing iced tea that’s perfect for sipping on a warm summer day.

Why I Love It

I love drinks that feel festive while still being sober friendly. So we took all the celebratory feel of a Bellini, but it’s lighter, fruitier, and refreshing enough to enjoy any time of day. The bougie raspberry ice cubes are more than just pretty—they keep the drink cold without watering it down, while slowly adding a layer of flavour, and bits of chunky raspberries to get stuck in your straw.

Description

Cool off with this Sunny Bellini Peach Raspberry Iced Tea! A refreshing alcohol-free mocktail made with frozen peaches, peach tea, and raspberry ice cubes. Perfect for hot weather summer entertaining.


Ingredients

Units Scale
Raspberry Ice Cubes
  • 1 cup frozen raspberries
  • 1/2 cup water (enough to fill cube tray)
Peach Slushy
  • 3 cups frozen sliced peaches
  • 1 1/2 cups peach juice
  • 1 tablespoon fresh lemon juice (optional)
Peach Tea
  • 4 peach tea bags
  • 4 cups cold water
To Serve
  • Fresh peach slices
  • Fresh or frozen raspberries
  • Honey or sugar (optional)
  • Fresh mint (optional)

Instructions

  1. Cold Brew the Tea: Place the tea bags in a pitcher, in cold water. Refrigerate for 6 to 8 hours or overnight. Or, place on a windowsill, in the sun for two hours, then refrigerate. Remove the tea bags and chill until ready to serve.
  2. Make the Raspberry Ice Cubes: Add frozen raspberries to an ice cube tray, leaving a little space for liquids, top with water and freeze. Freeze until solid, about 4 hours.
  3. Blend the Peach Base: Add frozen peaches, peach juice, and lemon juice to a blender. Blend until thick, smooth, and slushy.
  4. Assemble: Fill each glass halfway with the peach slushy. Add several raspberry ice cubes. Slowly pour the cold peach tea over the top. Garnish with fresh peach slices, raspberries, and mint if desired. Stir gently before sipping. Got drink umbrellas? Use them.
